NOT ONLY SPECK AT THE FARM IN CASTELROTTO
They turn 20,000 hams into speck each year on the farm Kaltenbrunnhof, as well as producing belly pork, Rindsgselchtes (smoked meat) and Kaminwurzen, plus garlic, paprika, venison and horse salami. The name “Kaminwurz” comes from ancient times when the sausages were smoked in the fireplace of the farms in South Tyrol.
