The speciality of the Kaltenbrunnhof farm is its own artisanal production of a good South Tyrolean Speck, which has been passed on from generation to generation. This typical ham speciality from South Tyrol with its characteristic nutty taste and deep red-white marbling is best eaten plainly with a hearty South Tyrolean afternoon snack “Marende”. The meat is firm but not hard and has a fine flavor.

FROM A FARM IN CASTELROTTO

For three generations now our Speck has been produced by hand at the Kaltenbrunnhof in Castelrotto with much love and skill. The sales assortment consists of pancetta, lean bacon, smoked pork neck, smoked beef meat, cold-smoked and air-dried raw sausage called “Kaminwurzen” and venison salami with garlic and paprika. By the way, the name Kaminwurz comes from earlier times when sausages were smoked in their smokehouses in the chimney flue on South Tyrolean farms.

The Kaltenbrunnhof farm is located in Castelrotto nearby the hamlet Tisana on 930 meters above sea level and its well known for its mild climate. It is situated in a very quiet and sunny area. The name “Kaltenbrunn” means cold fountain and this fountain is still placed in the middle of the farm’s courtyard where hikers can enjoy a pleasant refreshment. In the midst of the UNESCO World Natural Heritage Site surrounded by meadows and forests there is a magnificent panoramic view of the Sciliar massif and the Isarco valley.

CHEEKY GOATS AND OTHER PLAYMATES AT THE FARM KALTENBRUNNHOF

On the Kaltenbrunnhof farm in Castelrotto where stress and routine seem far away you can experience many emotions. The cheeky goats jump on the roof of their small stable inside their enclosure or they munch the just watered flowers without shyness. Nearby in the large enclosure there lives the fallow deer. These animals are rather reserved but you can see them as they arrive for dinner on time. The farmer looks after them and counts them; “…should be thirty…” mutters grandfather Toni. During the day cats and other small domestic animals run freely around the farm. If you want to touch and caress them you have to be very fast.

ALWAYS READY TO PLAY AT THE KALTENBRUNNHOF FARM

On the large lawn with its playground Anton, Fabian and Elisabeth are waiting for their next playmates. There is plenty to do: building sand cakes, go swinging, running around, collecting meadow flowers and much more.

After all these outdoor excitements you probably will probably need a snack. Unfortunately we can’t offer you fresh cow milk, the Kaltenbrunnhof farm for some years now doesn’t keep livestock anymore, but we can offer you our lovely handmade South Tyrolean Speck with our Schüttelbrot (crunchy flat bread) instead, can that console you?

FARM HOLIDAYS IN CASTELROTTO WITH ALL KINDS OF DELICACIES

Depending on the season, there are delicious vegetables, various fruits and berries and wonderful fragrances of herbs from our own garden. Our hard-working chickens provide fresh eggs. During the warm months a barbecuing area is available for our guests, which can be used at any time.

We will be happy to give you a little insight into everyday farming life and show you our farm and the handicraft business. For the sporty ones, hikes or other excursions can also be organized. If you would like to travel by bus or train, we will pick you up on request.
